Creamy Chipotle Chicken is perfect for a busy weeknight. It takes under an hour to make with prep and cooking time. Chipotle Chicken is great served over rice or pasta or you can keep it low carb and instead serve it over cauliflower rice or zucchini noodles. This recipe makes enough for two. Double the recipe if feeding a family of four or if you’d like leftovers for lunch later in the week.
Ingredients include: chicken breast, canned chipotle, mushrooms, garlic, water, flour, and heavy cream.

Creamy Chipotle Chicken
Ingredients
- 3 tbsp olive oil
- 1 chicken breast, cubed
- 3 cloves garlic, sliced
- 6-8 white mushrooms, sliced
- 1/2 cup water
- 2 tbsp flour or almond flour
- 1/4 cup heavy cream
- 1 – 3.5 oz can chipotle peppers blended in a food processor
Directions
- Heat 2 tbsp of olive oil in a skillet. Cook the cubed chicken until slightly browned then set aside in a bowl.
- Add 1 tbsp of olive oil to the skillet then add the garlic and mushrooms. Cook until mushrooms are soft.
- Add the water and chicken to the skillet then cover and simmer for about 10 minutes.
- Add the flour, heavy cream, and chipotle peppers. Stir well and bring to a simmer. Simmer for another 10 minutes, stirring occasionally.
