Ingredients

  • 12 oz of pasta (spaghetti or linguine are best)
  • 1 tbsp of olive oil
  • 3 slices of bacon, chopped (traditionally pancetta is used)
  • 3 cloves of garlic, minced
  • 2 tbsp of onion, finely chopped
  • 2 eggs
  • 1/2 cup of freshly grated parmesan
  • Salt & pepper to tests
  • A few leaves of basil, shredded (optional)

Directions

  1. Cook pasta until al dente, drain and set aside
  2. Add the two eggs into a bowl and beat. Mix in the parmesan, salt, and pepper
  3. Heat the olive oil in a large skillet
  4. Add the bacon and cook until just about done, stirring often
  5. Add the onion and garlic and cook until fragrant
  6. Add the noodles to the skillet and heat until hot
  7. Transfer to a large bowl and quickly add the egg mixture, tossing the pasta to coat. The mixture should thicken, but the eggs should not scramble.
  8. Toss in the fresh basil if desired for extra flavor

Top with extra parmesan and enjoy!
