
Believe it or not, I didn’t have roasted brussels sprouts or any type of brussels sprouts until adulthood.
My mom hates brussels sprouts, mostly because the brussels sprouts that she remembers were boiled. She’s interested in trying them again in the future though because she’s heard so much about them from me. Guess what’s on the menu when she visits? As for my dad, I’m not sure what he thinks. I don’t remember him making or eating brussels sprouts. I’ll have to ask him one of these days.
After a childhood without this leafy vegetable, I first had roasted brussels sprouts as a starter at a restaurant several years back. I’ve been hooked ever since. I’ve tried them with different seasonings, sauces, and herbs. Roasted brussels sprouts with bacon really takes the cake though.
Roasted Brussels Sprouts Recipe
Ingredients
- Brussel sprouts, sliced
- 2-3 slices bacon (uncooked), cut into small chunks
- 3 cloves of garlic sliced
- Seasonings*
- Olive oil

Directions
- Preheat oven to 425ºF
- Combine the brussels sprouts, bacon, garlic, seasonings, and olive oil and mix well
- Spread the mixture in a cast iron pan or baking sheet and roast for 30 minutes, stirring about halfway through

Recipe Notes
Seasonings – My personal favorite is Flatiron Pepper’s roasted onion, garlic, and jalapeño seasoning. A combo of other seasonings tastes great though. Suggested seasonings:
- Onion powder
- Hot pepper flakes
- Garlic powder
- Black pepper
- Salt
